Kale and walnut Pesto......(may contain nuts)


This can be made in bulk and then stirred through hot cooked pasta for a very fast meal
For two hungry people:

100g fresh and green kale, or could use any other green leafy veg including mixed salad bag
Handful of walnuts
10-20 basil leaves and/or small handful of parsley
2 cloves garlic
3 tablespoons olive oil
Quick squeeze lemon juice
Salt and pepper to taste

Toast the walnuts in a dry pan until they take on a light colour, tossing frequently so they do not catch.
Remove the tough stalks from the kale, gentler veg leave whole
Throw all the ingredients into a food processor and pulse for a minute, or until you reach the texture you want.
Stir through freshly cooked pasta with a reserved ladleful of the cooking water to thin down a little. Place in warmed bowls and sprinkle with some freshly grated Parmesan. Enjoy!


The walnuts could be substituted with cashews, or even pine nuts if you are feeling extravagant
